The Vineyard, Stockcross
Hand selected by head chef at The Vineyard Tom Scade our delicious Berkshire Trout has been on the Vineyard’s menu since day one of Tom’s arrival. Tom cures our trout in “California sunshine,” including lemon verbena, grapefruit and sumac. It is lightly cooked and sliced, served with horseradish (grated and puréed), diced apple and a covered in a veil of cucumber jelly. Enjoy a pre dinner of Berkshire Cold Smoked Trout on a bed of rocket with asparagus and beetroot and served with a creamed horseradish dressing and hot new potatoes.
